Cloud Mountain Kombucha is a small batch non-alcoholic kombucha brewery in Urbana, IL with a focus on locally sourced ingredients.
Utilizing our own garden and many other amazing growers in Illinois, we are able to keep the flavors locally inspired and support small farms.

Our team is a dynamic mix of backgrounds: Kyle brings expertise in brewing, art, and horticulture; he is the science behind our kombucha. Aimee’s talents span acting, costume design, and real estate, offering creativity and practical business insights. Andrew contributes from the entertainment industry, fabrication, and business sectors, bringing organizational skills and innovative thinking to the table.
Upon Kyle’s return home to the area after years out west spent as a professional beer brewer, our team started home-brewing beer and kombucha together. A couple of years in, a plan started being put into place to open our own local craft kombucha brewery.

What is Kombucha?
Kombucha is a fermented tea. It is made by introducing a S.C.O.B.Y. (symbiotic culture of bacteria and yeast) into brewed black or green tea, and sugar. The mix is left to ferment for 2-4 weeks, resulting in an effervescent drink that can vary from sweet to vinegary depending on how long it ferments. It is typical to chill, carbonate, and flavor the resulting beverage with any array of fruits, vegetables, herbs, or spices and to serve as a refreshing drink any time of day. Kombucha is also reported to contain probiotics, antioxidants, and beneficial organic acids, making it a healthful and therapeutic alternative to alcohol and traditionally sugary drinks. Due to the natural fermentation process, there is potential for kombucha to contain up to 0.5% alcohol.

Along with all these benefits, another important goal of Cloud Mountain is to utilize the uniqueness of the Midwest’s ecological diversity and climate to showcase the abundancy of growable plants and native species that provide not only incredible flavor, but sustenance as well.
We strive to support the local economy in choosing to purchase ingredients from local suppliers and showcase the bounty of nature through farming and foraging for as many ingredients as we can. A shout out to Walnut Street Tea Company for supplying our organic teas, the U of I Sustainable Student Farm, Sola Gratia, Delight Flower Farm and Blue Moon Farms for an array of herbs, vegetables and fruits, local foraging company Autumn Berry Inspired for their autumn olives and insightful knowledge on many native plant species, our own fruitful five-acre property that we like to call Goldfinch Farms, and to all current and future retailers and collaborators.
